Not that long ago, people used to make most of what they ate at home using fresh ingredients. Today it has become just a part of life to simply go to the supermarket and buy most of what we eat already prepackaged. Now, people are becoming more health conscious and aware of environmental issues. What better way to start working your way towards a healthier, more economic and green lifestyle than to return to the days of making more of your own food. You can start with these two common food items.
Everyone uses Ketchup, and it’s not that difficult to make. Here’s what you need;
- 2 (28 ounce) cans peeled ground tomatoes
- ½ cup water, divided
- 2/3 cup white sugar
- ¾ cup distilled white vinegar
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 ¾ teaspoons salt
- 1/8 teaspoon celery salt
- 1/8 teaspoon mustard powder
- ¼ teaspoon finely ground black pepper
- 1 whole clove
Pour ground tomatoes into slow cooker. Swirl 1/4 cup water in each emptied can and pour into slow cooker. Add sugar, vinegar, onion powder, garlic powder, salt, celery salt, mustard powder, black pepper, cayenne pepper, and whole clove; whisk to combine.
Cook on high, uncovered, until mixture is reduced by half and very thick, 10 to 12 hours. Stir every hour or so.
Smooth the texture of the ketchup using an immersion blender, about 20 seconds.
Ladle the ketchup into a fine strainer and press mixture with the back of a ladle to strain out any skins and seeds.
Transfer the strained ketchup to a bowl. Cool completely before tasting to adjust salt, black pepper, or cayenne pepper.
Now that you have ketchup, how about some mayonnaise to go along with it. This is easy to make too, but you will need a food processor to do the job right. Here’s what you need for a little over two cups of homemade mayo;
- 2 whole pastured eggs
- 1 tablespoon of apple cider vinegar
- ¾ teaspoon of salt
- 2 teaspoons of prepared mustard
- 2 cups of light olive oil
Toss the eggs, vinegar, salt and mustard into the food processor and blend. As the machine is blending, slowly add oil. Continue to add the oil very slowly until it’s all gone. After that just watch the mixture until becomes the texture of mayonnaise. You can add salt if you need too. You can store this for up to two weeks.
